Yummy Chunky Chilli

Love Food! Food, Fun & Friends

A family favourite if ever there was one! And makes great “ready meals” for pulling out of the freezer for when time is precious – and let’s face it, time is something we all need more of! Whether you’re looking for a nourishing mid-week meal for the family or making up batches of meals to freeze, this is a “must” try delicious dish you’ll cook time and time again.

There are variations of chilli amass and this version is my own concocted favourite, an experiment with a little extra here and there. Using succulent cubed beef and a few extra spices, this is a filling, hearty version of a firm favourite and very easy to make.

Andrew: So great for singles, couples and families to freeze for quick, instant and good food, What a great dish! So, how do we start?

How to Make Potato Wedges

DSCI1996Potato wedges…so very easy to do and rustle up at home. Here’s how!

Serves 1

Allow 150-200g potatoes per person (about 2 potatoes the palm size of a medium sized hand)

1 tsp sunflower oil per potato portion

1/2 tsp paprika per potato portion (optional)

  • Preheat the oven to gas mark 6, 200°C electric.
  • Clean or peel all the potatoes and then cut into quarters, lengthways. If rather chunky, cut each quarter in half again, lengthways again.
  • Place the uncooked potato wedges on a non-stick baking sheet or a baking tray covered with either a silicon sheet or greaseproof paper.
  • Allowing 1 tsp per potato portion, lightly brush the individual wedges with oil and dust with paprika.
  • Place in the centre of the hot oven and bake for 40-45 minutes.

Dawn: And there we have an easy accompanying side dish to a whole range of main meals.
Andrew: Yes, potatoes are so versatile.
